KARACHI: Adding too much salt is a common kitchen mishap that can significantly affect the taste of an otherwise well-prepared dish. While adding more salt to bland food is easy, correcting an overly salty dish can be more challenging.
Fortunately, several simple kitchen techniques can help reduce the perceived intensity of salt and make the food more enjoyable.
Add Potato
For curries and other dishes with enough liquid, a raw potato can be cut into two pieces and added to the food for around 10 minutes before being removed. Boiled potato can also be used and may be left in the dish if it suits the recipe.
Use Fresh Cream
Adding a small amount of fresh cream can soften the sharpness of salt in suitable dishes. Cream can also make the overall texture and flavour richer and smoother.
Try a Dough Ball
A small ball of wheat dough is another traditional home method. Place it in the curry for around 15 minutes and then remove it. This may help reduce the intensity of the salty flavour.
Add Water or Dairy
If the recipe allows, adding a little water can dilute the saltiness of a gravy or soup. Milk or cream can also help balance the flavour in dishes where dairy is appropriate.
Use Yogurt and Onion
For dry dishes such as meat, karahi or mixed vegetables, adding yogurt along with blended fried or browned onion can help balance an overly salty taste while also adding depth and richness to the dish.
Add Salt Gradually
Prevention is often easier than correction. Instead of adding a large amount of salt at once, it is better to add it gradually while cooking and taste the dish before adding more.
Keeping salt intake moderate is also generally considered better for overall health. Careful seasoning can therefore help maintain both a balanced flavour and a healthier diet.
