Crispy and chewy confection prepared with jaggery juice and sesame seeds is known as ‘Gajak’. Different other names of ‘Gajak’ are Tilsakri, Tilpatti, or Tilpapdi. Besides a source of enjoyment, it is also helpful in getting rid of phlegm.

Jaggery ½ kg
Johar juice 3 sachets
Lemon juice 1 pc
Fenugreek few drops
Celery ½ teaspoon
Kalonji 2 teaspoons
Coffee 2 teaspoons
Green fennel 1 daddle (aak muthi)
Sesame seeds 50 grams
Peanuts 100 grams
Preparation Method:
- Take a large pan, put three glasses of water into it.
- Add half kilogram of jaggery to it and keep on medium heat.
- When jaggery becomes syrups, add three sachets of johar juice, one lemon juice, a few drops of fenugreek, half a teaspoon of celery, two teaspoons of kalonji, two teaspoons of coffee and a handful of fennel.
- As the syrup starts to thicken slightly, add fifty grams of sesame seeds and one hundred grams of roasted peanuts. Keep stirring the spoon.
- Now cook it until the thick syrup becomes thick. Spoon it. If the syrup on the spoon starts to solidify, it is ready.
Put a little oil on a plate in advance. Now carefully turn this semi-hard jaggery and accessories over on the plate and cool it well under the fan or at normal temperature. When it hardens, carefully remove it with a knife and cut it into pieces and fill it in a jar.
